Homemade Cream Cheese
You can make cream cheese at home with just two ingredients!
INGREDIENTS
- 1/2 gallon of Dan and Debbie’s whole milk
- 1-2 large lemons
DIRECTIONS
-
Bring the milk to a boil over medium high heat on the stove, stirring frequently.
- Once milk comes to a boil, turn off the heat and add in the juice of 1-2 large lemons. You will see the milk start to curdle. Let the lemon + milk mixture sit for about 8-10 minutes uncovered.
- Strain the milk mixture through a strainer lined with cheesecloth, and catch the whey in a bowl – don’t throw out the whey we are going to use it! Gently remove the curds from the strainer and add to a food processor or blender.
- Blend the curds until you reach the right consistency that you want for cream cheese, and if you need your cream cheese creamier, slowly add back in some of the whey; roughly 1 tablespoon at a time until you reach the desired consistency. This would also be a perfect time to add in salt or any other seasoning if you wanted to season or flavor your cream cheese.
- Store in the fridge in an air tight container and enjoy!
