Chicken + Gnocchi Soup
Cozy, creamy + packed with flavor! This crockpot chicken and gnocchi soup is sure to please the whole family and is a great weeknight meal.
Ingredients
- 1 small onion, diced
- 2 ribs celery, chopped
- 2 carrots, chopped or shredded (your preference)
- 2 tbsp Dan and Debbie’s salted butter
- 2 lbs boneless skinless chicken breasts
- 32 ounce chicken broth
- 1 tbsp thyme
- 1 tbsp garlic pepper
- onion powder + garlic powder to taste
- 1 package gnocchi (shelf stable or refrigerated)
- 1 cup Dan and Debbie’s heavy cream
- 2 tbsp flour
- 2 cups spinach
Instructions
- In your crockpot, add diced onion, chopped celery, carrots, butter, seasonings, chicken broth, and chicken breasts.
- Cover crockpot and cook on high for 2 hours or low for 4 hours.
- Shred the chicken and add back to the crockpot.
- Add the gnocchi to crock pot.
- Mix heavy cream + flour together before adding it to the crockpot.
- Add spinach to crockpot, stir and cover. Cook on high for 20 more minutes, until the soup is thickened and the gnocchi are tender.
