Crockpot Potatoes
These crockpot potatoes are creamy and delicious!
- 4-5 pounds potatoes
- 1-2 cups Chicken Broth
- 4 cloves Garlic
- 1 ½ tsp Salt
- ½ tsp Pepper
- 1 stick Dan and Debbie’s Creamery Salted Butter
- 8 oz package Cream Cheese
- 8 oz Sour Cream
- 1-2 cups Dan and Debbie’s Creamery Heavy Cream
Instructions
-
Scrub all the potatoes clean under running water with a vegetable brush.
-
Spray crock pot with cooking spray. Chop potatoes into 1 1/2 to 2 inch chunks and place in crock pot. Add peeled garlic cloves, salt and pepper.
-
Now it’s time to add the chicken broth and set the cooking time. The length of cooking time determines how much chicken broth you’ll need to add: If you plan to cook your potatoes on HIGH for 4 hours, add 1 cup chicken broth. If you plan to cook your potatoes on LOW for 7-8 hours, add 2 cups chicken broth.
-
At the end of the cooking time, add the butter to the potatoes. Allow it to sit in the potatoes for about 5 minutes to soften.
-
Add the cream cheese and allow it to sit about 5 minutes to soften. Stir together with spoon.
-
Add sour cream then blend on low setting with a hand mixer till well mixed.
-
Add heavy cream about 1/2 cup at a time, then blend. Repeat adding the cream and blending until potatoes reach the consistency you prefer.
-
Taste, and adjust salt and pepper as needed.
-
Replace the lid onto the crock pot, adjust setting to “warm” and serve.
