RECIPE: Creamy Cheddar & Broccoli Soup
Creamy Cheddar & Broccoli Soup
I’m a lover of soup and this one does not disappoint! It’s my favorite way to eat broccoli.
Ingredients:
- 5T Butter
- 1/2 a Medium Onion Chopped
- 4 Cloves Minced Garlic
- 4T Flour
- 2.5 Cups of Chicken Stock
- 1t Salt
- 1t Black Pepper
- 1 Dash of Worstechire Sauce
- 1t Onion Powder
- 1t Garlic Salt
- 1/4t Nutmeg
- 1t Paprika
- 3 Cups of Broccoli Florets
- 2 Carrots Grated
- 2 Cups Milk or Cream
- 1.5T Brown Mustard
- 1 Cup Shredded Cheddar Cheese
- 2T Sour Cream or Greek Yogurt
Directions:
- In a large pan or dutch oven melt the butter over medium-high heat. Add the onion and cook until lightly golden and softened. Add the garlic and saute until fragrant.
- Add the flour and whisk well until the flour turns to a nice golden. Add the Chicken Stock, Broccoli, Carrots, Seasonings, and Worstecher Sauce and stir.
- Let that simmer on medium-low for 15-20 minutes until the veggies are cooked through.
- Stir in the Cheddar Cheese, Brown Mustard, and Milk and stir for another minute until everything melts down and mixes together. Taste test and adjust the amount of seasoning if needed.
- Add in the Sour Cream or Greek Yogurt for an extra creamy soup. Serve and ENJOY!
