“Fancy” Tomato Soup
Fake it until you make it right? Some nights I like to feel fancy, but I also don’t want to spend five hours in the kitchen to achieve that feeling. Thankfully there’s Mrs. Ferns Tomato Soup. While I absolutely love this soup on its own, somedays I like to make it feel like it was made in a cute little bistro!
Ingredients:
- Mrs. Ferns Tomato Soup
- 1 t + 1 T Butter
- 1 t Dried Basil
- 2 t Garlic Salt
- 2 T Whipping Cream
- 1 t Minced Garlic
- Black Pepper to taste
- 1 T Parmesan Cheese
- Roasted Garlic Olive Oil
- Cheese Curds for serving (optional)
Directions:
- Pour your Mrs. Ferns into a saucepan over Med-Low Heat add in one tablespoon of butter, your dried basil, and garlic salt stirring occasionally until the soup is heated through.
- In a small microwave-safe bowl add your whipping cream, minced garlic, a teaspoon of butter, parmesan, and pepper, and microwave for 15 seconds. You can skip the microwaving if you want to cool your soup down a touch before serving.
- Divide the soup among bowls into desired portions.
- With a small spoon drizzle the desired amount of cream over the top of your soup. Repeat with 1/4 t of olive oil per bowl. If you’re wanting extra cheesy soup, plop a handful of curds in and ENJOY!
